Ingredients

Bacon grease

1 jalapeno, sliced

1 small yellow or sweet onion, sliced

2 slices center-cut applewood smoked bacon

One 8-ounce all-beef frankfurter, such as Alpine Meats Frankfurter

Chipotle Sour Cream Sauce, recipe follows

1 gourmet seeded hot dog bun, toasted

Hickory smoked bacon chunks, rendered

Chipotle Sour Cream Sauce:

1/4 cup mayo (if you don't like mayo, you can use sour cream or plain yogurt)

1 teaspoon chipotle powder

1 clove garlic, minced

Juice from 1/2 a lime

Salt and freshly ground black pepper

Directions

  1. Heat a skillet over medium heat. Melt some bacon grease, add the jalapenos and saute until soft and dark, 8 to 10 minutes. In another skillet over medium heat, melt some bacon grease, add the onions and saute until soft and caramelized, 8 to 10 minutes.
  2. Take the bacon and, starting at one end, wrap the entire length of the frankfurter until completely covered. Secure with toothpicks.
  3. Heat a deep-fryer to 350 degree F. Fry the frankfurter until the bacon is cooked, about 3 minutes.
  4. Spread some Chipotle Sour Cream Sauce on the bun. Add some jalapenos. Add the frankfurter. Top with onions. Squeeze on more sauce. Sprinkle with bacon chunks.

Chipotle Sour Cream Sauce:

  1. Combine the mayo, chipotle powder, garlic and lime juice. Season with salt and pepper. Mix well.
