Snap Pea and Radish Salad

1 pound snap peas

6 radishes, grated 

1 small shallot, minced 

Zest and juice of 1 lemon 

4 tablespoon extra-virgin olive oil

Kosher salt and freshly ground black pepper

2/3 cup crumbled feta 


  1. Slice the peas crosswise on the diagonal into small pieces. Toss in a bowl with the radishes and shallot. Add the lemon zest, lemon juice, oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix well. Divide the salad among plates and sprinkle with the feta.
