Ingredients

Pancakes:
  • 1 1/2 cup sifted whole-wheat flour
  • 1/4 cup sugar 
  • 1 tablespoon baking powder 
  • Dash salt
  • 1 cup milk 
  • 1 large egg 
  • Dash almond extract
  • Oil, for oiling the griddle 
Stuffing:
  • 1/2 cup maple syrup
  • 1 tablespoon unsalted butter
  • Juice of 1 lemon
  • Cayenne pepper, for sprinkling
  • Orange marmalade, for spreading 
  • Handful of fresh basil leaves, for stuffing 
  • 16 strips bacon, cooked 
  • 16 slices Brie 

Directions

For the pancakes: In a large bowl, sift together the flour, sugar, baking powder and salt. Make a well in the center and pour in the milk, egg and almond extract; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, pouring or spreading the cakes in an oblong shape so you can roll them up when ready. Cook until golden brown, then flip and cook the other side until golden brown. Remove from the heat. Cook the remaining pancakes in the same manner.

Microwave the maple syrup and butter in a small bowl until the butter has melted. Add the lemon juice and some cayenne and stir to combine. Spread some orange marmalade onto each pancake. Add 2 to 3 basil leaves, 1 to 2 strips of bacon and 1 to 2 pieces of Brie. Drizzle with the syrup mixture. Roll it up, and enjoy.
