The Partisan is at the forefront of DC's modern cuisine serving fresh, high quality meat thanks to their own in-house butcher shop. No part of the animal goes to waste here; they even fry an apple pie in beef fat. Del Campo's South American menu includes Smoked Wagyu Steak and a massive sandwich called a Chavito, piled high with an assortment of meat including seared rib-eye, Mortadella and Ham. It's as tall as the Washington Monument!
