Tyler Florence jets to Montpellier, France, in learn the local technique for making omelettes. Then he heads for Valencia, Spain, where he teams up with Maria Castillo, doyenne of traditional Spanish tortillas. Finally, he returns home to New York City to make his version of the ultimate omelette.
