Fill a wine glass with crushed ice and set aside
Muddle the pineapple, lemon and orange in a shaker tin. Add the cognac, passion fruit syrup, bitters and crushed ice. Roll the ingredients between two cocktail tins 4 to 5 times and pour all the contents back into the wine glass. Garnish with a slice of pineapple.
