Heat olive oil in a saucepan to medium heat. Add onion and garlic and cook until soft. Add spices and tomatoes. Cook 15 minutes, then add fresh basil.
Mix ricotta, Parmesan and parsley. Spoon cheese mixture onto crepes and roll up into logs. Cover the ceramic dish with half of the marinara. Place rolled manicotti on top of the marinara, and then cover them with remaining sauce. Place sliced mozzarella on top of manicotti and heat in a microwave on high for 8-10 minutes. Serve with crusty Italian bread.
