Preheat the oven to 350 degrees F.
Place the sheets of matzo on a baking sheet lined with tin foil and sprinkle the chocolate chips over each piece. Bake until the chocolate begins to melt, about 3 minutes, and then with a knife or spatula, spread the melting chocolate chips over the sheets of matzo and immediately sprinkle with the coconut flakes. Once the chocolate has set, break the sheets into freeform pieces.
