Put the echinacea in a jar and pour over the vodka to cover completely. Let infuse for 2 to 4 weeks. Strain the vodka. Combine the cranberry juice, honey, ginger, chiles and gelatine in a saucepan. Stir together and then simmer for 5 minutes. Take off the heat and let cool. Strain through a sieve into a bowl.
When cooled, stir in the lemon juice and echinacea tincture. Pour into ice lollie molds and freeze.
Take during colds or infection. The lollies keep in the freezer for up to 3 months.
