Blackberry Cocktail

  • Strips of zest from 1 lemon, plus 2 tablespoons juice
  • 1 pint blackberries
  • 1 cup sugar
  • 1 cup honey
  • 2 ounces bourbon
  • Sparkling water, to top off

Directions

For the mint ice cubes: Fill 2 ice cube trays with water. Distribute the mint leaves and zest among the compartments. Freeze until solid.

For the blackberry simple syrup: Put the blackberries in a medium bowl, reserving a few for garnish. Combine the sugar with 1 cup water in a small saucepan. Cook over medium-low heat, stirring occasionally, until the sugar is dissolved. Pour the simple syrup over the blackberries in the bowl and let steep for 20 minutes. Strain and let cool completely.

For the honey water: Combine the honey with 1 cup warm water in a small bowl.

For the cocktail: Combine the lemon juice, bourbon, 1/4 cup blackberry simple syrup and 1 tablespoon honey water in a cocktail shaker filled with ice. Shake and then strain into a glass filled with some mint ice cubes. Top off with the sparkling water and garnish with the blackberries. Reserve the remaining mint ice cubes, blackberry simple syrup and honey water for additional drinks.

    This was very refreshing. I was able to easily cut the honey water directions down to make just the amount needed for my guests. Doing the mint ice cubes required planning ahead - not my best skill - but it was worth it. They gave a special look to the drink. I'll be doing these again!

    I haven't tried this yet and it looks delicious, but I have a problem with the Honey Water. Seriously? make 2 cups of honey water when you only need 1 T for the cocktail? The simple syrup makes enough for about 6 servings depending on how much you lose in straining, which is reasonable for a dinner party. But the honey water is enough for 32 servings. Incredible waste.
