Preheat the oven to 350 degrees F.
Place the sweet potato chunks in salted water. Place over medium-high heat and boil until tender, 25 to 30 minutes. Drain
and place back into the same pot. Add the butter and sugar
. Using a masher, begin mashing the sweet potatoes
until the butter is melted and all the ingredients are combined. Make sure the sweet potato mixture is smooth and free of lumps. Place the sweet potato mixture into a large bowl.
In a bowl, whisk
together the eggs, milk, extracts
and nutmeg. Add the milk mixture to the sweet potato mixture. Pour into the pie crust
. Bake until the filling is set and the tip of a knife comes out clean when inserted into the center, 45 to 50 minutes. Cool completely before slicing.
