In a small bowl, whisk together the olive oil and vinegar until emulsified. Season with salt and pepper. In a large bowl, combine the romaine hearts, tomatoes, peppers, onions, parsley, olives, cucumbers and feta. Drizzle with vinaigrette and toss well. Serve immediately.
