Preheat a grill over medium-high heat.
Roll the ears of corn in the olive oil in a shallow plate, then toss with the smoked paprika, salt and pepper. Grill the corn until charred on all sides, about 6 minutes.
Spread the corn liberally with the mayonnaise. Top with the feta cheese and lime zest. Garnish with the cilantro and mint.
