Classic St. Louis-Style Pizza

Ingredients

20 ounces pizza dough

Flour, for dusting

2 tablespoons cornmeal

1/2 cup pizza sauce

1 cup shredded Provel processed cheese

Toppings, such as pepperoni, mushrooms, onions, peppers, sausage or black olives

Directions

Special equipment:
a pizza peel
  1. Preheat the oven to 500 degrees F.
  2. Dust the dough with some flour and roll it out into a large circle. Using a pizza cutter, trim the dough into an 18-inch circle, then dock the dough with a fork to keep the crust flat and crisp. Sprinkle a pizza peel with the cornmeal. Transfer the dough to the pizza peel and top with the pizza sauce, then cover with the Provel. Leave the pizza plain or add your favorite toppings. Cook the pizza until the edges brown, about 10 minutes. Cut into little squares and serve.
