No Sleep Til Philly Cheesesteak

1 pint local craft beer, such as 8th Wonder Brewery beer

8 ounces easy melt yellow cheese 

1/2 cup heavy cream 

One 6-ounce rib eye steak

Salt and pepper

1 ounce onions, thinly sliced 

Oil, for sauteing

1 freshly-baked baguette 


  1. In a double boiler, combine the beer, cheese and cream and cook until melted together.
  2. Thinly slice the rib eye and season with salt and pepper. Heat a grill or grill pan to medium-high heat and sear the steak to medium-rare.
  3. Saute the onions with some oil in a skillet over medium heat until cooked. Toast the baguette.
  4. Place the steak in the baguette, pour the melted beer cheese over the meat and top with the sauteed onions. Enjoy!
