EZ Beer Cheese

8 ounces lager beer, such as Brooklyn Lager

1 pound sharp Cheddar, grated 

8 ounces cream cheese 

2 cloves garlic, minced 

1/2 onion, minced 

1/2 tablespoon hot sauce, such as Tabasco

1 1/2 teaspoons salt 

1 teaspoon cayenne pepper

1 teaspoon dry mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon freshly ground black pepper 


  1. Pour the beer into a glass and allow it to sit until it loses its effervescence. Combine the Cheddar, cream cheese, garlic, onion, hot sauce, salt, cayenne, mustard, Worcestershire and black pepper in a food processor and pulse until slightly blended. With the motor running, slowly pour in the beer. Transfer the mixture to a bowl, cover and chill for at least 4 hours.
