College Chicken and Vegetables

3 skinless chicken breasts

2 cans of mushroom soup

1/2 onion, sliced

4 carrots, chopped (bite-size)

1/2 bunch of broccoli, chopped (bite-size)

3 large potatoes, chopped

Handful of mushrooms

Salt and pepper

2 tablespoons olive oil

1/2 cup white wine


  1. Rub olive oil on chicken. Add salt and pepper to taste. Place chicken breasts in deep baking pot and brown. In separate mixing bowl, combine all ingredients, stir and mix well. Place chicken on top.
  2. Cover and bake at 375 degrees F for 50 minutes. Remove the lid, vegetables and soup/gravy from pot. Turn breasts skin-side-up, and broil on high for 2 minutes for color.
