2 tablespoons light brown sugar
1/4 teaspoon ground cinnamon
1/2 cup dried cranberries
1 large Granny Smith apple, peeled, cored and cut into medium dice
2 3/4 cups whole milk
1 cup quick cooking Irish oatmeal (recommended: McCann's)
1 teaspoon freshly grated orange zest
2 tablespoons granulated sugar
Apple mixture can be made 2 days in advance and stored in the refrigerator in a container with a tight fitting lid. Bring the mixture to room temperature or reheat over low heat on top of the stove or in a microwave for a minute before using.
